How To Make Pork Belly Soft Tacos 

Ingredients:

For the Pork Belly:

  • 2 lbs pork belly, skin removed
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon chilli powder
  • 1/2 teaspoon dried oregano
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon apple cider vinegar

For the Tacos:

  • Soft corn or flour tortillas
  • 1 cup red cabbage, thinly sliced
  • 1 cup green cabbage, thinly sliced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup red onion, thinly sliced
  • 1 avocado, sliced
  • Lime wedges

For the Sriracha Mayo:

  • 1/2 cup mayonnaise
  • 1-2 tablespoons Sriracha sauce (to taste)
  • 1 tablespoon lime juice

Instructions:

Prepare the Pork Belly:

  1. Season the Pork Belly:
    • Preheat your oven to 300°F (150°C).
    • Mix together the smoked paprika, ground cumin, garlic powder, onion powder, chilli powder, dried oregano, salt, and pepper in a small bowl.
    • Rub the spice mixture all over the pork belly.
  2. Sear the Pork Belly:
    • In a large oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat.
    • Add the pork belly and sear on all sides until browned, about 3-4 minutes per side.
  3. Slow Cook the Pork Belly:
    • Add the chicken broth, soy sauce, honey, minced garlic, and apple cider vinegar to the skillet.
    • Bring to a simmer, then cover the skillet and transfer it to the preheated oven.
    • Cook for 2.5 to 3 hours, or until the pork belly is tender and easily shreds with a fork.
  4. Rest and Shred the Pork Belly:
    • Remove the pork belly from the oven and let it rest for 10-15 minutes.
    • Shred the pork belly into bite-sized pieces using two forks.

Prepare the Sriracha Mayo:

  1. Mix the Sriracha Mayo:
    • In a small bowl, combine the mayonnaise, Sriracha sauce, and lime juice.
    • Mix until smooth and set aside.

Assemble the Tacos:

  1. Warm the Tortillas:
    • Heat the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until warm and pliable.
  2. Assemble the Tacos:
    • Place a generous amount of shredded pork belly on each tortilla.
    • Top with sliced red and green cabbage, fresh cilantro, red onion, and avocado slices.
    • Drizzle with the Sriracha mayo.
  3. Serve:
    • Serve the tacos with lime wedges on the side for squeezing over the top.
