Instructions:
- Marinate the chicken:
- In a bowl, combine the thinly sliced chicken breast with soy sauce and cornstarch. Stir well to coat the chicken evenly. Let it marinate for about 15-20 minutes.
- Prepare the stir-fry sauce:
- In a small bowl, mix together the chilli jam with a splash of water to loosen it slightly. Set aside.
- Cook the broccoli and cashews:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the broccoli florets and stir-fry for 2-3 minutes until they start to soften but are still crisp. Remove the broccoli from the skillet and set aside.
- In the same skillet, add the cashews and stir-fry for 1-2 minutes until lightly toasted. Remove the cashews from the skillet and set aside.
- Cook the chicken:
- Add the remaining tablespoon of vegetable oil to the skillet. Add the minced garlic and sliced red bell pepper. Stir-fry for 1-2 minutes until fragrant.
- Add the marinated chicken to the skillet and stir-fry for 4-5 minutes until cooked through and lightly browned.
- Combine everything:
- Return the cooked broccoli and cashews to the skillet with the chicken. Pour the chilli jam sauce over the chicken and vegetables.
- Stir well to coat everything evenly in the sauce. Cook for an additional 1-2 minutes until everything is heated through and well combined.
- Serve:
- Serve the chicken, chilli jam, broccoli, and cashew stir-fry hot over cooked rice.
- Garnish with chopped green onions or cilantro, if desired, and serve with lime wedges on the side for squeezing over the stir-fry.
