Chicken and Mushroom Bake – Super Easy!

Here’s a simple and delicious recipe for a chicken breast and mushroom bake using a can of chicken soup:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese (optional)
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cups sliced mushrooms
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken:
    • Season the chicken breasts with salt and pepper.
    • Heat the olive oil in a large skillet over medium-high heat.
    • Sear the chicken breasts for 2-3 minutes on each side until golden brown. They don’t need to be cooked through as they will finish cooking in the oven. Remove the chicken from the skillet and set aside.
  3. Cook the Vegetables:
    • In the same skillet, add the chopped onion and cook for 2-3 minutes until softened.
    • Add the sliced mushrooms and cook for another 5 minutes until the mushrooms are tender and any liquid has evaporated.
    • Add the minced garlic and dried thyme, and cook for another minute until fragrant.
  4. Prepare the Sauce:
    • In a mixing bowl, combine the can of condensed cream of chicken soup and the sour cream. Mix until smooth.
  5. Assemble the Bake:
    • In a large baking dish, spread half of the onion and mushroom mixture on the bottom.
    • Place the seared chicken breasts on top of the mushroom mixture.
    • Spread the remaining onion and mushroom mixture over the chicken.
    • Pour the soup and sour cream mixture evenly over the chicken and vegetables.
    • If using, sprinkle the shredded cheddar cheese over the top.
  6. Bake:
    • Cover the baking dish with aluminium foil and bake in the preheated oven for 25 minutes.
    • Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the top is bubbly and golden brown.
  7. Serve:
    • Garnish with chopped fresh parsley.
    • Serve the chicken bake hot, ideally with a side of rice, pasta, or a fresh salad.
