Ingredients:
For the Base:
- 200g (about 7 oz) plain sweet biscuits (such as Marie biscuits or graham crackers)
- 100g (about 7 tablespoons) unsalted butter, melted
For the Mint Filling:
- 2 cups (240g) powdered sugar (also known as icing sugar)
- 1/4 cup (60g) unsalted butter, softened
- 2 tablespoons milk
- 1 teaspoon peppermint extract
- Green food colouring (optional)
For the Chocolate Topping:
- 200g (about 7 oz) dark chocolate, chopped
- 2 tablespoons unsalted butter
Instructions:
1. Prepare the Base:
- Crush the Biscuits:
- Place the plain sweet biscuits in a food processor and pulse until they are finely crushed. Alternatively, you can place the biscuits in a plastic bag and crush them with a rolling pin.
- Combine with Melted Butter:
- Transfer the crushed biscuits to a mixing bowl and pour in the melted butter. Mix until the butter is evenly distributed and the mixture resembles wet sand.
- Press into Pan:
- Line a 9×9-inch (23×23 cm) square baking dish with parchment paper, leaving some overhang for easy removal later.
