How To Make Banana and Cinnamon Bread

Ingredients

  • 2 to 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 3/4 cup sugar (can reduce to 1/2 cup if you prefer it less sweet)
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Butter or spray a 4×8 inch loaf pan.
  2. Mash the Bananas:
    • In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.
  3. Mix Wet Ingredients:
    • Mix in the sugar, beaten egg, and vanilla extract.
  4. Combine Dry Ingredients:
    • Sprinkle the baking soda and salt over the mixture and mix in.
    • Add the flour, ground cinnamon, and ground nutmeg (if using) to the bowl, and mix until the batter is just combined. Be careful not to over-mix.
    • Fold in the chopped nuts or chocolate chips if you’re using them.
  5. Bake the Bread:
    • Pour the batter into the prepared loaf pan.
    • Bake for 60-65 minutes, or until a toothpick inserted into the centre comes out clean. If the top is browning too quickly, you can cover it with aluminium foil during the last 10-15 minutes of baking.
  6. Cool and Serve:
    • Remove from the oven and let the bread cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
    • Slice and serve your Banana and Cinnamon Bread warm or at room temperature.
