Ingredients
- 2 to 3 ripe bananas, mashed
- 1/3 cup melted butter
- 3/4 cup sugar (can reduce to 1/2 cup if you prefer it less sweet)
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg (optional)
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Butter or spray a 4×8 inch loaf pan.
- Mash the Bananas:
- In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.
- Mix Wet Ingredients:
- Mix in the sugar, beaten egg, and vanilla extract.
- Combine Dry Ingredients:
- Sprinkle the baking soda and salt over the mixture and mix in.
- Add the flour, ground cinnamon, and ground nutmeg (if using) to the bowl, and mix until the batter is just combined. Be careful not to over-mix.
- Fold in the chopped nuts or chocolate chips if you’re using them.
- Bake the Bread:
- Pour the batter into the prepared loaf pan.
- Bake for 60-65 minutes, or until a toothpick inserted into the centre comes out clean. If the top is browning too quickly, you can cover it with aluminium foil during the last 10-15 minutes of baking.
- Cool and Serve:
- Remove from the oven and let the bread cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
- Slice and serve your Banana and Cinnamon Bread warm or at room temperature.
