How To Make Chicken, Chili Jam, Broccoli, and Cashew Stir-Fry

Ingredients:

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 head of broccoli, cut into florets
  • 1/2 cup unsalted cashews
  • 2-3 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1/4 cup chilli jam (store-bought or homemade)
  • Cooked rice, for serving
  • Chopped green onions or cilantro, for garnish (optional)
  • Lime wedges, for serving (optional)

Instructions:

  1. Marinate the chicken:
    • In a bowl, combine the thinly sliced chicken breast with soy sauce and cornstarch. Stir well to coat the chicken evenly. Let it marinate for about 15-20 minutes.
  2. Prepare the stir-fry sauce:
    • In a small bowl, mix together the chilli jam with a splash of water to loosen it slightly. Set aside.
  3. Cook the broccoli and cashews:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the broccoli florets and stir-fry for 2-3 minutes until they start to soften but are still crisp. Remove the broccoli from the skillet and set aside.
    • In the same skillet, add the cashews and stir-fry for 1-2 minutes until lightly toasted. Remove the cashews from the skillet and set aside.
  4. Cook the chicken:
    • Add the remaining tablespoon of vegetable oil to the skillet. Add the minced garlic and sliced red bell pepper. Stir-fry for 1-2 minutes until fragrant.
    • Add the marinated chicken to the skillet and stir-fry for 4-5 minutes until cooked through and lightly browned.
  5. Combine everything:
    • Return the cooked broccoli and cashews to the skillet with the chicken. Pour the chilli jam sauce over the chicken and vegetables.
    • Stir well to coat everything evenly in the sauce. Cook for an additional 1-2 minutes until everything is heated through and well combined.
  6. Serve:
    • Serve the chicken, chilli jam, broccoli, and cashew stir-fry hot over cooked rice.
    • Garnish with chopped green onions or cilantro, if desired, and serve with lime wedges on the side for squeezing over the stir-fry.
